week eight: taco salad

Now this week we decided on a meal that even I was pretty confident I could handle. Probably a good idea to boost the cooking morale after last week’s self-esteem killing run in with the stove. My family has always been really invested in and passionate about our intake of Mexican food. Like the waiter at our favorite Mexican restaurant in town had each of my family’s orders memorized for a while. There were five of us. Every Friday. And we LOVED it! So it’s about time that I start working on a meal in this realm that I have grown up enjoying so much!



  • 1 lb ground turkey
  • 1 packet taco seasoning mix
  • 1 package salad
  • fresh veggies for salad
    • two green onions
    • 1 tomato
    • any others that you think will be good
  • 1/2 can of kidney beans
  • small can of corn
    • we had leftover corn to use, so I’m not sure how much we actually used, but really you can add any amount that you think will be tasty
  • spicy ranch salad dressing
  • salsa
  • tortilla chips


  • defrost your meat
  • chop veggies for salad
    • Fun side note: green onions are SO MUCH EASIER to chop than regular onions and there is no one that has ever been happier about that than me lol


  • start browning meat in large pan on the stove (high-medium, about an 8 on the dial)
  • stir occasionally, when good and brown, empty extra fat from pan into the sink
  • add taco seasoning and follow directions on the packet
    • essentially just stirring, adding water, and letting it simmer until ready
  • while meat is cooking, add chopped vegetables into the salad
  • crumble up a few handfuls of tortilla chips into the salad
  • add dressing (we added a little less than 1/2 a cup, but can be added to taste)
  • add a couple spoonfuls of salsa and then mix all together
  • when meat is finished cooking, let cool for a few minutes and then add as much as you want into your salad
    • we didn’t add the whole pan, left a little on the side for anyone to add on their own if they wanted extra
  • grab some tortilla chips to garnish

And there you have it! A simple, but delicious dinner that feels fresh and adds a little spice to your weekday routine! Just when you might be feeling like this whole “cooking real meals” thing probably isn’t for you, in comes the tried and true TACO SALAD to restore your confidence and faith in the chef life! 😉
