week five: flank steak

STEAK!  We are going BIG this week and doing some always delicious and always a favorite, meat and potatoes.  I feel like cooking a little steak dinner is a very grown up, sophisticated, and romantic thing to know how to do, and I do love a good romantic evening (*wink wink hint hint going out to a special someone*) 😉 So I’m very excited about this dish and ready to add it to my ever-growing repertoire!

*FLANK STEAK*

Ingredients:

  • the meat! 1 flank steak
  • 1/3 cup of olive oil
  • 1/3 cup of lemon juice
  • a “pretty generous handful of parsley” (super accurate measurements courtesy of mama)
  • ~4-5 cloves of garlic
  • potatoes
  • asparagus
  • butter
  • parmesan cheese
  • salad

Prep:

  • defrost the steak
  • wash the potatoes and stick a fork in them a few times (prevents against exploding potatoes in the oven)
  • chop the garlic (*hellooo boyfriend!*)
    • I would also like to note that I have now officially chopped more garlic in the last month than I have ever chopped in the previous 28 years of my life, so that’s been fun) lol
  • wash and trim the asparagus, place in microwave-able dish in small amount of water to prep for steaming later
  • preheat oven to 375 degrees for the potatoes

Instructions:

  • place potatoes in oven and set timer for 60 minutes
  • combine olive oil, lemon juice, garlic, and parsley, stirring well
  • place defrosted steak on a foil-covered cooking sheet, and stick a fork in it a few times (same as the potatoes) in order to help marinade
  • drizzle (as my mom puts it) or more accurately (in my opinion) spread half of the marinade with a spoon over one side of the meat
  • let sit until potato timer goes off
  • when timer for potatoes goes off, check potatoes and if needed, turn up the heat to about 385 degrees for the last 15 minutes of cooking time
    • you want the potatoes to feel soft
  • turn on the broiler in the oven, and once hot, place the steak in the oven for about 7 minutes on the first side
  • after the first side is done, take the meat out, flip it over, and “drizzle” the remaining marinade on the other side of the steak
  • place back in the oven for another 6-7 minutes (or until desired doneness; ours was medium-rare aka a little bit of pink)
    • it should be noted that while I usually like my steak well done, my parents are not fans. so we “compromised” and did it how they like it. 😉 and I ate the end pieces which turned out closer to actual done-ness. lol
  • when done to your liking, take it out and have the resident steak knife expert cut it up!
  • ALSO during this last 6-7 minutes, cover the bowl of asparagus with Saran warp and place in the microwave for about 4 minutes
  • prep salad
  • take out the potatoes
  • when asparagus is done, let cool and drain out the water. put butter and parmesan cheese on the asparagus & voila!

As long as you get your timing correct, all the parts of this dinner puzzle should come together quite nicely and be ready to go!  And I must say, I was very impressed with this dish!!  Not only with my own skills *hehe* but just with how tasty the steak was with the marinade and how simple the marinade itself was to put together!  Now I just need to add a nice wine, some candles, and a couple pretty roses and we can call this romantic evening “well done”! 🙂
